English whisky has come a long way in a short time, and The Lakes Distillery has been one of the names leading the charge. Its latest release is a significant one: Signature, the distillery's first permanent single malt.

Until now, much of the distillery's reputation rested on limited editions and special releases. Signature changes that by giving drinkers a core expression they can return to, a sherry-led single malt bottled at 47% ABV. Reviewers have noted that it is non-chill filtered and has no added colouring.

The whisky is the work of whiskymaker Sarah Burgess, who joined the Lakes team from The Macallan. Her approach borrows from the world of wine and Cognac through a technique known as élevage, in which the spirit is nurtured as it matures rather than simply left to sit.

In practice, that means moving casks between different locations and climates and blending across cask types, building layers of flavour along the way. The distillery describes Signature as the fullest expression yet of that philosophy.

Early tasting notes have been warm. Reviewers have picked out dried fruit, pecans, dark chocolate, baking spices and a lift of citrus, with the sherry influence evident on the palate. Whisky Magazine, City AM and a string of specialist reviewers covered the launch, a sign of how much attention the distillery now commands.

Behind the scenes, the business has also entered a new era of ownership. The Lakes Distillery is now part of Nyetimber, the English sparkling wine producer, bringing together two of the country's best-known premium drinks names. City AM reported that the distillery and its operations would remain in the Lake District.

For Cumbria, that matters. The distillery has become a visitor attraction as well as a producer, drawing whisky lovers to the shores of Bassenthwaite Lake and adding a new dimension to the region's food and drink offer.

Signature is available through The Lakes Distillery's website and selected retailers. Visitors planning a trip to the distillery near Bassenthwaite Lake can find details of tours, tastings and opening arrangements online before they travel.
